So the other day I got the taste for some banana muffins. I didn't want to buy store bought muffins that had a hundred ingredients in them with names of things I couldn't pronounce nor spell. I also wanted it to be plant based with as little ingredients as possible.
After looking at several recipes online I came up with my own recipe. I quickly whipped up a batch and put them in the oven and asked my husband to watch them while I go and teach my online Math course. When I returned Dh said it was so good he decided to put on a pot of coffee to go with them😀
What you will need:
1) 3 cups of Kamut flour (or your flour of choice....I made some from scratch by blending Kamut seeds)
2) 6-8 super ripe bananas
4) 6 - 8 Medjool dates
3) 1/2 cup of avocado oil
4) 1 tsp baking soda (can be substituted with Mountain Valley sparkling spring water or Perrier water )
5) 1/2 cup of coconut milk
6) a dash of salt
7) Walnuts ( as desire)
Preheat the oven to 350 degrees
Blend all the ingredients except the walnuts until smooth with no chunks. Oil pan.
After you pour the batter into the muffin pans, sprinkle walnuts on top before baking.
Then bake for 30 to 35 minutes. Makes 12+ servings.
