I love sweet strawberries more than any other fruit. When I saw some organic strawberries on sale a few days ago, I had to have them! I love strawberry shortcake so I figured, why not try to make one? I didn't have whipped cream so I just whipped up some cashew milk, on a high speed, to create a liquidity whip looking cream. This worked out just find for me. Plus, I got to finally use the last of my cashews milk I made a few days ago.You can substitute the sugar for honey as a healthier alternative as well.


INGREDIENTS:

3-4 CUPS OF SLICED ORGANIC STRAWBERRIES
1 CUP OF POWDERED SUGAR
VANILLA DESSERT CUPS
2 CUPS OF CASHEWS
4 CUPS OF WATER
2 TABLESPOON OF VANILLA




Blend cashews and water on high speed until a milk form. Strain small pieces of cashews from milk. Then add powdered sugar and vanilla to milk mixture and blend again. Place the dessert cups on a plate. Add some of the milk mixture into the cups. Place the strawberries into each cup. Lastly, pour the milk mixture  over the top of the strawberries.

SO SWEET AND SO GOOD!!!!

  1. Another thing you can do, fill the cups with vanilla yogurt and top it off with the strawberries.
